Tiramisu

Ingredients

  1. 16 oz Mascarpone cheese - 450 grams
  2. 4 egg yolks
  3. 2/3 cup of granulated sugar - 133 grams
  4. 1 tsp vanilla extract
  5. 1/4 tsp salt
  6. 1.5 cups of cold heavy cream - 360 grams
  7. Lady fingers - 30 to 60
  8. Strong black coffee - espresso preferred - about 1.5 cups cooled down to room temp
  9. Cocoa powder - for dusting

Method

  1. Mascarpone cheese -> Whip on medium for 30 to 60 secs
  2. In a bowl - egg yolks + sugar -> put over a LOW double boiler - whip on medium/high for 2 mins - DO NOT overmix
  3. Whipped mascarpone cheese + egg yolks & sugar mixture + salt + vanilla -> mix/whip until JUST COMBINED - DO NOT overmix
  4. Separate bowl - whip heavy cream until soft peaks
  5. Fold in the mascarpone cheese/egg yolk/sugar/salt/vanilla mixture into the heavy cream soft peaks mixture - gently - DO NOT overmix
  6. Assembly - dip lady fingers into the coffee - 1 sec per side - quickly!
  7. Assembly - line the bottom of a square baking dish with dipped lady fingers > then put over about half of the cream mixture > dipped lady fingers > rest of the cream mixture
  8. Smooth the cream out > chill overnight
  9. Sift cocoa powder evenly over the top of the tiramisu before serving
  10. Cut into squares and enjoy!
