Tiramisu
Ingredients
- 16 oz Mascarpone cheese - 450 grams
- 4 egg yolks
- 2/3 cup of granulated sugar - 133 grams
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1.5 cups of cold heavy cream - 360 grams
- Lady fingers - 30 to 60
- Strong black coffee - espresso preferred - about 1.5 cups cooled down to room temp
- Cocoa powder - for dusting
Method
- Mascarpone cheese -> Whip on medium for 30 to 60 secs
- In a bowl - egg yolks + sugar -> put over a LOW double boiler - whip on medium/high for 2 mins - DO NOT overmix
- Whipped mascarpone cheese + egg yolks & sugar mixture + salt + vanilla -> mix/whip until JUST COMBINED - DO NOT overmix
- Separate bowl - whip heavy cream until soft peaks
- Fold in the mascarpone cheese/egg yolk/sugar/salt/vanilla mixture into the heavy cream soft peaks mixture - gently - DO NOT overmix
- Assembly - dip lady fingers into the coffee - 1 sec per side - quickly!
- Assembly - line the bottom of a square baking dish with dipped lady fingers > then put over about half of the cream mixture > dipped lady fingers > rest of the cream mixture
- Smooth the cream out > chill overnight
- Sift cocoa powder evenly over the top of the tiramisu before serving
- Cut into squares and enjoy!
